Glycine max, commonly known as soybean in North America or soya bean, is a species of legume native to East Asia, widely grown for its edible bean which has numerous uses. The plant, classed as an oilseed rather than a pulse by the UN Food and Agriculture Organization, produces significantly more protein per acre than most other uses of land. High in protein and used as a vegetarian and lactose alternative for many foods, soya has transcended its Asian origins to become the most widely cultivated legume across the globe.

It is a very good source of protein, B vitamins and minerals. Tofu – also known as bean curd is made fromsoya milk by coagulating the soya proteins with calciumor magnesium salts. The whey is discarded and the curds are processed. It is an excellent source of iron andcalcium and a very good source of protein.
